    Roasted until sweet and caramelised, pumpkin makes up nearly a quarter of this lasagne, layered with an equal measure of vibrant spinach and smooth ricotta. Between the pasta sheets sit diced tomato, garlic, onion and herbs, all brought together with a silky béchamel of butter, milk and wheat flour.

    A scatter of cheddar and parmesan goes over the top, then it is slow baked until the surface turns golden and the edges bubble. A pinch of nutmeg and black pepper keeps it warm rather than heavy — a comforting vegetarian classic done properly, not a thin vegetable substitute.

    Vegetarian and Halal, it suits a mixed table where not everyone eats meat, and it is the sort of dish that satisfies without needing a side of anything. Ricotta makes up eight per cent of the dish, and the pumpkin is roasted before it goes between the sheets. Contains wheat, gluten and milk.

Cooking Instructions

Oven

For best results – Defrost thoroughly under refrigeration before heating.
Preheat the oven at 140-160°c


Defrosted: Pierce the film and heat for 20-25 minutes covered, then remove film and
heat for additional 10-12 mins, until golden on top and hot throughout.


Frozen: Pierce the film and heat for 40-45 minutes covered, then remove film and
heat for additional 12-15 mins, until golden on top and hot throughout.
Stand 5-10 mins before serving

    Tasty and not heavy for pasta

    This is my favourite dish with Providoor. It’s very tasty with a good combination of ingredients. It’s nice and light and not heavy or oily like lasagna tends to be. Generous servings and I actually got 4 serves out of it.

    I took one star off for incorrect instructions. Firstly the box it comes in does not even state what temperature the oven should be on. Secondly, the instructions say best cooked defrosted. I missed this the first time I cooked it and cooked straight from frozen and it was delicious. The second time I followed the instructions and it was rather soggy. My brother is a chef and he said it’s best to cook from frozen as pasta tends to go soggy and be over-soft once thawed and the sauce will be watery. I found this out first hand. I also don’t like that these meals are to be cooked in plastic containers.
