    Silvia Colloca's Classic Italian Lasagne is built the way it should be: layers of fresh pasta, a braised veal and pork ragu that has been simmered for hours, and a rich bechamel that ties it all together.

    This is not a shortcut lasagne. Silvia's recipe uses traditional Italian technique: slow-braised meat, fresh pasta sheets, and a bechamel made from scratch. The result is a lasagne with genuine depth of flavour, the kind you would find in a family kitchen in Bologna, not a supermarket freezer aisle.

    For best results, defrost fully in the fridge before reheating in the oven at 180 degrees Celsius for 30 to 35 minutes. Remove the foil for the last five minutes for a golden, bubbling top.

    Serves 2. One of Australia's favourite comfort meals, delivered in temperature-controlled packaging with ice bricks.

Cooking Instructions

Oven (Fan Forced)

For best results – defrost thoroughly under refrigeration before heating.

Preheat oven to 160°C (fan forced).
Remove outer packaging and film.

Defrosted:
Cover tray loosely with foil.
Place on a baking tray in the centre of the oven.
Heat at 160°C (fan forced) for 20–25 minutes.

Remove foil.

Return to oven and heat for a further 10–12 minutes until golden on top and piping hot throughout.
Rest for 5–10 minutes before serving.

Frozen:
Cover tray tightly with foil.
Place on a baking tray in the centre of the oven.
Heat at 160°C (fan forced) for 40–45 minutes.

Remove foil.

Return to oven and heat for a further 12–15 minutes until golden on top and piping hot throughout.
Rest for 5–10 minutes before serving.

Cook Step 1

Cooking instructions are based on standard fan forced home ovens, stoves, and microwaves. Cooking times may vary. Always check that the internal temperature reaches 75°C before serving. For best results, cook from defrosted.

    Tasty and not heavy for pasta

    This is my favourite dish with Providoor. It’s very tasty with a good combination of ingredients. It’s nice and light and not heavy or oily like lasagna tends to be. Generous servings and I actually got 4 serves out of it.

    I took one star off for incorrect instructions. Firstly the box it comes in does not even state what temperature the oven should be on. Secondly, the instructions say best cooked defrosted. I missed this the first time I cooked it and cooked straight from frozen and it was delicious. The second time I followed the instructions and it was rather soggy. My brother is a chef and he said it’s best to cook from frozen as pasta tends to go soggy and be over-soft once thawed and the sauce will be watery. I found this out first hand. I also don’t like that these meals are to be cooked in plastic containers.

    Lots of veggies and delicious sauce. If I was making myself would include more chicken. Shared between 2 I found myself a little hungry after.
