George Calombaris' 12-Hour Slow Cooked Lamb Shoulder is grass-fed Australian lamb, slow-cooked until it falls apart at the touch of a fork. Rich, deeply savoury, and impossibly tender, this is the lamb shoulder that put George's name on the map.

    Twelve hours of patient cooking builds layers of flavour you simply cannot rush. The result is meat that melts into itself, with a depth and richness that rivals any fine-dining Greek restaurant in Melbourne. Serve it as the centrepiece of a Sunday lunch or a special dinner, and watch it disappear.

    Pair with Pomme Puree or Aromatic Rice for a complete meal. For best results, defrost fully in the fridge before reheating in the oven at 180 degrees Celsius for 30 to 40 minutes.

Cooking Instructions

Oven

Preheat oven to 190°C and remove the lamb from the vacuum pouch.

Defrosted: Place Lamb on a tray and cook for 40-45 minutes or until golden brown and piping hot.

Frozen: Cook for 60-70 minutes or until golden brown and piping hot.

Carefully remove from the oven, serve, and enjoy.

Cooking instructions are based on standard fan forced home ovens, stoves, and microwaves. Cooking times may vary. Always check that the internal temperature reaches 75°C before serving. For best results, cook from defrosted.
