    Christine Manfield is one of Australia's most decorated chefs, and this coconut and prawn curry shows exactly why. Succulent prawns sit in a sauce of coconut milk and coconut oil, sharpened with tamarind paste and lifted by mango, tomato and fresh chilli. Curry leaf, ginger, garlic, ground coriander and turmeric do the aromatic work.

    It is one of the most-reviewed dishes on our menu and a genuine team favourite — a masterclass in balance between creamy, tart and hot. The heat is real, so treat it as a hot curry. It is gluten free and dairy free, and contains crustaceans. Serves 2, net weight 450g.

    Light enough for a Tuesday, impressive enough to put in front of guests. Serve it with aromatic rice and let the sauce do the talking, or keep going through the seafood range for the rest of the week.

Pairs well with

For the extra level of flavour stir coriander leaves & a little sliced green chilli through the curry once heated & garnish with fried curry leaves. Serve with some roti and mint yoghurt or on a bed of Providoors Aromatic Rice

Cooking Instructions

Stove Top

For best results, defrost before cooking.

Pour curry into a medium-size pot and heat on high heat until simmering. Reduce heat to medium and cook for 5 -7 minutes, stirring occasionally. Make sure prawns are firm to touch and cooked through. Keep pot covered throughout.

Serve and enjoy.

Cooking instructions are based on standard fan forced home ovens, stoves, and microwaves. Cooking times may vary. Always check that the internal temperature reaches 75°C before serving. For best results, cook from defrosted.

    Honestly this was way nicer than takeaway. The chicken was very tender and the sauce so delicious. I served it with rice, pappadums and some side dishes which we really loved. I will definitely buy again!

    Tasty and not heavy for pasta

    This is my favourite dish with Providoor. It’s very tasty with a good combination of ingredients. It’s nice and light and not heavy or oily like lasagna tends to be. Generous servings and I actually got 4 serves out of it.

    I took one star off for incorrect instructions. Firstly the box it comes in does not even state what temperature the oven should be on. Secondly, the instructions say best cooked defrosted. I missed this the first time I cooked it and cooked straight from frozen and it was delicious. The second time I followed the instructions and it was rather soggy. My brother is a chef and he said it’s best to cook from frozen as pasta tends to go soggy and be over-soft once thawed and the sauce will be watery. I found this out first hand. I also don’t like that these meals are to be cooked in plastic containers.
