Preparation rule: For best results, defrost food in the refrigerator before use. Never submerge food or its packaging in water to defrost or reheat it. Some products give better results cooked from frozen; use that method only where the product’s instructions state it.
Lamb shoulder, shanks and kofta are different products, so do not assume they use the same reheating time or appliance. Start with the instructions on your pack. If you are serving several dishes, plan around the one that needs the longest preparation and have the accompanying sauce and sides ready to serve with it.
Start with your lamb product
Keep the pack beside you while preparing the meal. The 12-Hour Slow Cooked Lamb Shoulder is a sharing main, while Tuscan Braised Lamb Shanks and Grass-Fed Lamb Kofta with Middle Eastern Style Sugo have their own sauce, packaging and heating steps. Their methods are not interchangeable.
Lamb shoulder: current oven method
The shoulder lists four servings. Its current preparation steps specify 190°C. Remove the vacuum pouch and place the lamb on a tray. From defrosted, cook for 40–45 minutes; from frozen, cook for 60–70 minutes, until golden brown and piping hot. Carefully remove from the oven and serve. Follow the latest sleeve if its instructions differ. The twelve hours in the product name describe its original slow cooking, not the time needed at home.
Tuscan Braised Lamb Shanks
The current instructions say to defrost completely in the refrigerator first. Choose one of the published methods below:
- Stovetop: remove from the bag into a saucepan. Heat covered over medium-low heat and gently simmer for 10–15 minutes, stirring occasionally.
- Oven: preheat to 170°C. Transfer the shanks and sauce into an oven-safe dish, cover tightly with foil and heat for 20–25 minutes.
- Both methods specify an internal temperature of 75°C before serving.
Lamb kofta with sugo
The current detailed instructions say to defrost thoroughly under refrigeration. For the stovetop, remove packaging, transfer to a saucepan and heat over medium heat for 10–12 minutes, stirring the sauce and turning the kofta regularly until heated through. Never submerge the food or its packaging in water.
For the microwave, remove outer packaging and pierce the film or transfer to a microwave-safe container. The published sequence is HIGH for 6–7 minutes, stirring the sauce and turning the kofta halfway through, then a further 2–3 minutes or until heated through. Stand for one minute and stir gently. Follow the latest pack if its instructions differ.
Keep sauce and sides ready
Choose sides before heating the main. Pomme Purée or vegetables can complete the plate, but need their own preparation. Avoid extending the lamb’s heating time just because a side is running late; coordinate the instructions and serving order first.
Common questions
Is one oven temperature right for all lamb?
No. Shoulder, shanks and kofta have different methods. Use the product’s latest pack.
Can I use the stovetop?
The shanks and kofta have detailed stovetop methods. Do not apply those methods to a different lamb product.
How do I avoid drying out lamb?
Use the correct thawing and heating instructions rather than guessing a longer time. Keep sauce or juices with the dish as directed and coordinate sides so it can be served promptly.
