Cooking Instructions

Oven

For Best Results: Defrost thoroughly under refrigeration before heating.

Remove porchetta from packaging and pat the skin completely dry with paper towel.

Leave uncovered in the fridge for 2–4 hours if time allows to further dry the skin.

Preheat oven to 220°C (fan forced 200°C).

Place porchetta on a wire rack over a tray, skin side up.

Roast for 25–35 minutes until the skin begins to blister and crackle.

Rotate tray if needed to ensure even crisping.

Reduce oven temperature to 160°C.

Continue heating for 30–45 minutes until heated through.

For Food Safety: Ensure core temperature reaches above 75°C.

Rest for 10–15 minutes before slicing to retain juices.

If crackling needs more lift, finish under grill for 3–5 minutes, watching closely to avoid burning.

Stove

Cooking instructions are based on standard fan forced home ovens, stoves, and microwaves. Cooking times may vary. Always check that the internal temperature reaches 75°C before serving. For best results, cook from defrosted.

“This one’s a feast dish. Pork Shoulder rolled with herbs, garlic and fennel, slow-roasted until the meat is juicy and the crackling sings. Inspired by Mediterranean street food, made for sharing.” – George Calombaris

Tasty piece of pork however it was extremely fatty and did not cook as per instructions. Needed a lot longer to be ready.

Wasn’t a great success. Initially there were no instructions (Providoor have since corrected that), but then it didn’t really crisp up. Nice but not really worth the money.

It appears that your voucher belongs to the old Providoor, which, unfortunately, is not us. :(

We understand how much the original Providoor meant to many Australians, especially during the challenging times of COVID. It provided a way to enjoy high-quality meals from beloved restaurants in the comfort of your home. We also understand that some of you may still hold vouchers from the previous iteration of Providoor, and we sincerely apologise for any inconvenience this may cause.

When the original Providoor, unfortunately, went into administration, we made the decision to purchase the brand because we recognised its significance to so many Australians. Providoor was more than just a business; it was a source of comfort, connection, and joy during tough times. However, while we have revived and rebranded Providoor to focus on delivering gourmet frozen meals from celebrity chefs, we are a completely new company with a different business model and operations.

This means that we do not have any obligation to honour the vouchers issued by the previous company, as those financial liabilities were not transferred to us during the acquisition. We know this may be disappointing news, but please understand that we are committed to making this transition as smooth as possible for our valued customers.

Thank you again for your understanding and for being a part of Providoor’s journey. We are committed to providing you with the highest quality gourmet experiences, and we look forward to serving you in the future.

Warm regards,
The Providoor Team
