Silvia Colloca's Mediterranean Chicken is a celebration of simple, robust Italian flavours. Free-range chicken is slowly braised in white wine and cherry tomatoes, with olives and capers adding a salty, briny kick that brings the whole dish to life.
This is the kind of cooking Silvia grew up with: honest ingredients, confident seasoning, and enough time in the pot for everything to come together. It is a generous sharing dish that fills the kitchen with incredible aromas as it reheats.
Serves 2 generously, or 4 as part of a larger spread. Naturally gluten-free. For best results, defrost fully in the fridge before reheating in the oven at 180 degrees Celsius for 25 to 30 minutes.

Garnish the dish with fresh rosemary finely chopped or chopped parsley, and Providoor's Focaccia bread or Manu's Pomme Purée.
Cooking Instructions
Stove Top
Defrosted: Pierce film and heat in the microwave for 5 minutes, until hot.
Frozen: Pierce film and heat in the microwave for 7 minutes, until hot.
Serve and enjoy.
Oven
Preheat oven to 160°C.
Defrosted: Place contents into an oven-safe dish, cover with foil, and heat for 20 minutes. Then, increase to 190°C and heat uncovered for 5 more minutes.
Frozen: Remove packaging and place contents into an oven-safe dish, then add a teaspoon of water. Heat covered for 35 minutes, then increase to 190°C and heat uncovered for 10 more minutes.
Carefully remove, serve, and enjoy.
Cooking instructions are based on standard fan forced home ovens, stoves, and microwaves. Cooking times may vary. Always check that the internal temperature reaches 75°C before serving. For best results, cook from defrosted.

However, while we have revived and rebranded Providoor to focus on delivering gourmet frozen meals from celebrity chefs, we are a completely new company with a different business model and operations.
This means that we do not have any obligation to honour the vouchers issued by the previous company, as those financial liabilities were not transferred to us during the acquisition. We know this may be disappointing news, but please understand that we are committed to making this transition as smooth as possible for our valued customers.
